Cynara cardunculus var. scolymus
This statuesque perennial brings height and a dramatic focal point to the summer border. Silver-toned thistle type foliage creates a tall mound, above which stands large, purple flowerheads through summer. Loved by pollinators, the flowers can be left to provide food for birds in autumn, can be cut to add drama in cut flower arrangements, or dried to use in dried floral arranging. Grown for their edible flower buds, but ornamental enough for the flower garden.
